Not Quite Baskin-Robbins

With plans to make homemade vanilla ice cream this weekend, I spent the better part of an hour looking for sauces that would be a nice compliment. After pouring through numerous cookbooks and magazines I settled on a recipe from one of my first ever but rarely used cookbooks, “Favorite Brand Name Best-Loved Recipes of All Time. Since I can never get enough chocolate and I think it pairs so unbelievably well with peanut butter I figured what could be wrong with “Peanut Butter Fudge Sauce”?

Guess what? Not a thing!

Peanut Butter Fudge Sauce

Peanut Butter Fudge Sauce

1/2 cup corn syrup
1/2 cup creamy peanut butter
1/4 cup heavy or whipping cream
1/2 cup semisweet chocolate chips

In medium microwave-safe bowl combine corn syrup, peanut butter and cream. Microwave on high for 1 1/2 minutes or until boiling. Add chocolate chips and stir until melted. Serve warm over ice cream.

Store remaining sauce in refrigerator. To reheat, microwave uncovered on low (30%) for about 1 1/2 minutes, just until pourable.

Yields about 1 1/4 cups

As I mentioned, I’m planning to make ice cream, so I don’t have any on hand right now and wasn’t able to sample the sauce actually on ice cream. But I have total confidence it will be delicious on ice cream. If not I’ll just eat it straight from the bowl as I did earlier. I’m not sure what was better about this sauce - the taste or how incredibly easy it was to make.
